Delicious Saute Mushrooms and green onions

Delicious saute mushrooms and green onions are one of my favorite dishes. The first time I made them I couldn’t believe they where so easy to make. If you buy the mushrooms already sliced it is even easier and faster.

In my chop ahead post I talked about the advantages of having your staple vegetable already chopped. In his case I already had the green onions chopped in my freezer. So for this dish I just grabbed the green onions chopped in the freezer and the mushrooms were already sliced.

I also buy a big jar of minced garlic that I keep in the fridge, so the only thing I really had to do was to cute the lime and squeeze the juice.

The longest time on this recipe is to wait until the mushrooms realize their liquid and it almost evaporates. I know some people barely cooked the mushrooms but I like the flavor they develop after they realize the liquid.

The first time I made mushrooms I didn’t know they reduced their size almost half, so I thought I was making a lot and at the end it was enough just for 2 or 3 people, so that is why this recipe calls for 2 pounds on mushrooms, don’t think it is to much. You will see how much they will shrink.

You can try this recipe with onions instead of green onions. I prefer green onions, I think  it complements the flavor of the mushrooms. Also the lime juice add some kick to the mixture. I have used white wine before but recently I enjoy more the tanginess that bring the lime.
